Whisk together eggs with remaining ¼ teaspoon salt, ⅛ teaspoon black pepper, and a splash of water. Spray skillet with cooking spray and heat over medium. Pour in eggs and scramble gently until cooked through. Break into small chunks and transfer to bowl with turkey sausage.

Add half the shredded cheddar cheese, salsa, and chopped cilantro to the turkey and eggs. Stir until evenly incorporated.

Lay tortillas flat on a clean surface. Evenly distribute approximately ⅔ cup of filling onto each. Fold in the edges and roll the tortillas tightly into burritos.

Heat a griddle pan or skillet lightly sprayed with cooking spray over medium heat. Place burritos seam-side down and cook for 2-3 minutes until golden. Flip and cook an additional 2 minutes on the other side to crisp and brown. Remove from heat and sprinkle remaining cheddar cheese inside if desired.
