Breakfast Cookies Healthy 2 Ingredients (Printer-Friendly)

Soft, chewy breakfast made with just oats and banana. Quick option for healthy, energizing mornings.

# What You'll Need:

→ Base

01 - 2 medium ripe bananas, peeled
02 - 1 3/4 cups quick oats

→ Optional Mix-ins

03 - 1/4 cup semi-sweet chocolate chips
04 - 1 tablespoon peanut butter or any preferred nut butter
05 - 1/2 teaspoon ground cinnamon
06 - 1 tablespoon honey

# Steps to Follow:

01 - Set oven to 350°F and line a large baking sheet with parchment paper.
02 - In a medium bowl, thoroughly mash bananas using a fork until mostly smooth.
03 - Stir quick oats into the mashed bananas until evenly incorporated. Add any desired mix-ins such as chocolate chips, nut butter, cinnamon, or honey, and mix well.
04 - Scoop approximately 2 tablespoons of dough for each cookie onto the prepared baking sheet. Flatten and shape rounds with the back of a metal spoon or lightly moistened fingertips, as cookies will not spread during baking.
05 - Bake in the preheated oven for 15 to 18 minutes, or until edges are set and lightly golden.
06 - Allow cookies to cool on the baking sheet for 3 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

# Extra Suggestions:

01 - For best results, use very ripe bananas for maximum sweetness and moisture.
02 - Shaping the cookies before baking is important, as the dough will not spread.
03 - Use parchment paper to prevent sticking and facilitate easy cleanup.
