Set oven to 350°F and line a large baking sheet with parchment paper.

In a medium bowl, thoroughly mash bananas using a fork until mostly smooth.

Stir quick oats into the mashed bananas until evenly incorporated. Add any desired mix-ins such as chocolate chips, nut butter, cinnamon, or honey, and mix well.

Scoop approximately 2 tablespoons of dough for each cookie onto the prepared baking sheet. Flatten and shape rounds with the back of a metal spoon or lightly moistened fingertips, as cookies will not spread during baking.

Bake in the preheated oven for 15 to 18 minutes, or until edges are set and lightly golden.

Allow cookies to cool on the baking sheet for 3 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
