Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.

Lay a tortilla flat. Place two provolone slices on one half, add shredded beef and French fried onions. Roll tightly, tucking in the sides. Brush the inside edge with olive oil to seal.

Place roll ups seam-side down on the baking sheet. Brush tops and sides with remaining olive oil. Bake 8 to 10 minutes until golden, crispy, and cheese is melted.

Combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan. Simmer gently over medium heat for 3 to 4 minutes.

Allow roll ups to rest 2 minutes. Slice into halves or thirds. Serve warm with au jus for dipping.
