Preheat the oven to 400°F and spray a 12-cup muffin pan with nonstick spray.

Heat olive oil in a large skillet over medium heat for about 1 minute, if using. Add ground beef and crumble it as it browns. Drain excess grease once cooked.

Stir in taco seasoning and chunky salsa into the browned beef. Remove from heat and set aside.

Place two wonton wrappers overlapping in each muffin cup to cover the bottom and sides, or use one large wrapper if it sufficiently covers the cup with some overhang.

Spoon approximately 2 tablespoons of the beef mixture into each wonton cup, using a spring-loaded scoop for ease.

Bake uncovered for 10 minutes until the wonton wrappers are toasted and lightly browned.

Immediately top each baked cup with shredded cheese so it melts, then add preferred optional toppings before serving.
