# What You'll Need:

→ Vinaigrette

01 - 60 ml freshly squeezed lime juice
02 - 10 g granulated sugar
03 - 2 g kosher salt
04 - 1 g freshly ground black pepper
05 - 30 ml extra virgin olive oil

→ Salad

06 - 900 g seedless watermelon, diced into bite-sized cubes
07 - 200 g baby cucumbers, sliced (or sub 1 medium English cucumber, sliced)
08 - 40 g red onion, thinly sliced
09 - 100 g feta cheese, crumbled
10 - 15 g fresh mint leaves, torn or chopped

# Steps to Follow:

01 - Combine fresh lime juice and granulated sugar in a jar with a tight-fitting lid. Shake vigorously or stir until sugar dissolves completely. Add kosher salt, ground black pepper, and olive oil, then shake again until well emulsified.
02 - Place cubed watermelon, sliced cucumbers, red onion, half of the crumbled feta cheese, and mint leaves in a large mixing bowl.
03 - Gently toss the ingredients to combine thoroughly. Drizzle approximately two-thirds of the prepared vinaigrette over the salad and toss gently to coat.
04 - Transfer salad to a serving platter or bowl. Top with the remaining feta cheese and extra mint leaves if desired. Drizzle with the rest of the vinaigrette before serving.

01 - For best flavor and texture, assemble and serve the salad just before eating. If refrigerated in advance, the watermelon may release liquid, so use a slotted spoon for serving leftovers.
