Crispy tater tots layered with seasoned beef, cheese, tomatoes, and jalapeños for a perfect shareable dish.

# What You'll Need:

→ Proteins

01 - 1 lb 93% lean ground beef

→ Vegetables

02 - 1 medium yellow onion, diced
03 - 1 cup cherry tomatoes, sliced
04 - 0.25 cup fresh cilantro leaves, chopped (optional)
05 - 0.25 cup jalapeños, sliced (fresh or pickled)

→ Prepared Foods

06 - 4 cups frozen tater tots
07 - 1 package taco seasoning mix (1 oz)
08 - 0.5 cup water
09 - 0.75 cup nacho cheese sauce (store-bought or homemade)
10 - 0.5 cup sour cream (for serving)

# Steps to Follow:

01 - Preheat the oven to 350°F. Arrange frozen tater tots on a parchment-lined or nonstick sprayed baking sheet. Bake according to package instructions until crispy.
02 - Meanwhile, heat a sauté pan over medium heat. Add ground beef and diced onion. Cook, breaking up the meat with a spatula, for about 7 minutes or until the beef is no longer pink. Drain excess fat.
03 - Stir in taco seasoning mix and 0.5 cup water into the cooked beef and onions. Simmer and stir for 2 to 3 minutes until mixture is well combined and thickened.
04 - Remove the baked tater tots from the oven and transfer to a large serving dish. Spread seasoned beef evenly over the tater tots.
05 - Layer nacho cheese sauce, sliced cherry tomatoes, jalapeños, and chopped cilantro over the beef-covered tater tots.
06 - Garnish with sour cream dollops on top or serve alongside as a dipping option.

# Extra Suggestions:

01 - To prevent sogginess when preparing ahead, cook tater tots and meat separately, refrigerate, and only assemble immediately before serving.
02 - For best results, add extra water while cooking the beef to keep it moist when reheated.
03 - Tater tots can be cooked in an air fryer in batches if preferred.
