Heat a skillet over medium heat. Season sirloin steak as preferred and cook until browned on both sides, approximately 3-4 minutes per side. Remove from heat and let rest for 5 minutes before thinly slicing against the grain.

Warm a clean skillet over medium heat ensuring it is hot enough to brown tortillas without burning.

Lay one tortilla flat. Spread half of the cheese blend evenly over one half, then layer with sliced steak, followed by remaining cheese. Spread jalapeño sauce evenly over the empty half of the tortilla. Fold the tortilla in half to enclose filling.

Place assembled quesadilla in the preheated skillet. Cook for 3-4 minutes until the bottom is golden brown and crispy. Carefully flip and cook the other side for an additional 3-4 minutes until cheese is melted and crust is crisp.
