01 - 1 lb ground beef, lean

02 - 1 packet taco seasoning mix (approx. 2 tablespoons)
03 - 6 fl oz water (3/4 cup)

04 - 1 cup refried beans
05 - 4 fl oz enchilada sauce (1/2 cup)

06 - 1 cup shredded Mexican cheese blend

→ Tortillas & Oil

07 - 8 8-inch flour tortillas
08 - Vegetable oil for frying (approx. 1 cup)

# Steps to Follow:

01 - In a large skillet over medium heat, brown and crumble the ground beef. Drain excess fat, then return beef to skillet. Add taco seasoning and water, stir, and bring to a boil. Reduce heat and simmer until thickened, about 5 minutes.
02 - Heat vegetable oil in a large skillet over medium heat until hot. Fry tortillas one at a time for 2-4 minutes, flipping frequently, until crisp. Remove and drain on paper towels.
03 - Heat refried beans in a microwave-safe bowl until warm to facilitate spreading.
04 - Spread a generous layer of warmed refried beans onto each fried tortilla, then evenly distribute the seasoned ground beef on top.
05 - Place a second fried tortilla on top of the beef layer. Spread about 2 tablespoons of enchilada sauce evenly across the tortilla, then sprinkle with shredded cheese.
