01 - 1.1 pounds (500 g) shrimp, fresh or thoroughly thawed if frozen, peeled and deveined

03 - 4 cloves garlic, finely minced or pressed
04 - 2 tablespoons soy sauce, low-sodium preferred
05 - 1 teaspoon chili flakes, or to taste

06 - 4 medium russet potatoes, peeled and cut into thin strips
07 - Vegetable oil, such as canola or sunflower, for frying

# Steps to Follow:

01 - Peel the potatoes and cut them into thin, uniformly sized strips.
02 - Bring a large pot of salted water to a boil. Add potato strips and cook for 5 minutes. Drain immediately and pat dry with paper towels until thoroughly dry.
03 - Heat vegetable oil in a deep fryer or heavy frying pan to 350°F (180°C). Fry potatoes in batches until golden brown and crisp, about 5–7 minutes. Do not overcrowd the pan. Transfer to a plate lined with paper towels and season with salt and pepper while hot.
04 - In a large bowl, combine honey, minced garlic, soy sauce, and chili flakes. Add shrimp and toss to evenly coat. Set aside to marinate for 15 minutes.
05 - Heat a skillet over medium-high heat. Add marinated shrimp and cook for 2–3 minutes per side, or until shrimp are pink, just opaque, and slightly caramelized. Do not overcook.
06 - Arrange crispy fries onto plates. Top with sautéed spicy honey garlic shrimp and drizzle with any remaining sauce from the pan. Serve immediately.
