Peel the potatoes and cut them into thin, uniformly sized strips.

Bring a large pot of salted water to a boil. Add potato strips and cook for 5 minutes. Drain immediately and pat dry with paper towels until thoroughly dry.

Heat vegetable oil in a deep fryer or heavy frying pan to 350°F (180°C). Fry potatoes in batches until golden brown and crisp, about 5–7 minutes. Do not overcrowd the pan. Transfer to a plate lined with paper towels and season with salt and pepper while hot.

In a large bowl, combine honey, minced garlic, soy sauce, and chili flakes. Add shrimp and toss to evenly coat. Set aside to marinate for 15 minutes.

Heat a skillet over medium-high heat. Add marinated shrimp and cook for 2–3 minutes per side, or until shrimp are pink, just opaque, and slightly caramelized. Do not overcook.

Arrange crispy fries onto plates. Top with sautéed spicy honey garlic shrimp and drizzle with any remaining sauce from the pan. Serve immediately.
