01 - 3 lb boneless chuck roast
02 - 1 large yellow onion, cut into large chunks
03 - 4 medium carrots, cut into chunks
04 - 3 celery stalks, cut into chunks
05 - 4 garlic cloves, finely minced
06 - 1 tbsp tomato paste
07 - 1½ cups beef stock, low sodium
08 - 2 tsp Worcestershire sauce
09 - 1 rosemary sprig
10 - 1 thyme sprig
11 - 1 tbsp granulated garlic
12 - 1 tbsp onion powder
13 - 2 tsp paprika
14 - 1 tsp dried oregano
15 - 2 bay leaves
16 - 1 packet ranch seasoning mix
17 - 1 packet brown gravy powder
18 - Salt and pepper, to taste
19 - 3 tbsp neutral oil, for searing

→ Goat Cheese Mashed Potatoes

20 - 5-6 large russet potatoes
21 - 1 cup heavy cream, warmed
22 - 4 tbsp European-style butter
23 - 4 tbsp mild goat cheese
24 - Salt, to taste

# Steps to Follow:

01 - Heat oil in a skillet until shimmering. Pat dry the chuck roast and season generously with salt and pepper on both sides. Sear the roast for 4 to 5 minutes per side until deeply browned to build flavor.
02 - In a bowl, whisk together tomato paste, beef stock, Worcestershire sauce, granulated garlic, onion powder, paprika, oregano, ranch seasoning, and brown gravy powder until combined.
03 - Place the seared roast in the slow cooker. Add carrots, celery, onion, rosemary, thyme, and bay leaves around the roast. Pour the sauce mixture evenly over all ingredients.
04 - Cover and cook on high for 5 hours or low for 8 to 9 hours until beef is fork tender and vegetables are soft but intact.
05 - Remove visible fat from the roast. Taste the sauce and adjust salt and pepper as needed. Using two forks, gently shred or slice the beef. Keep on warm until serving.
06 - Peel and quarter the potatoes. Place in salted cold water and bring to a boil; cook until fork tender. Drain well and return to pot. Add butter and allow to melt. Mash while gradually folding in warmed heavy cream and goat cheese until creamy. Season generously with salt.
07 - Plate a generous portion of goat cheese mashed potatoes, top with tender pot roast, and spoon over sauce. Garnish with fresh herbs if desired.
