Rinse chicken breasts under cold water and pat thoroughly dry with paper towels. Dice the onion and finely mince the garlic.

Lightly season the chicken breasts with salt and freshly ground black pepper on both sides.

Place diced onions and minced garlic in the bottom of the slow cooker. Lay the seasoned chicken breasts on top of the aromatics.

Pour barbecue sauce evenly over the chicken. Turn chicken pieces to ensure they are well coated with the sauce.

Cover and cook on low heat for 6 hours, or until the chicken is tender and easily pulls apart with forks.

Remove cooked chicken from the slow cooker and transfer to a bowl. Shred using two forks, then return shredded chicken to the pot and mix thoroughly with the barbecue sauce.

Serve the barbecue chicken warm, garnished with freshly chopped chives if desired. Ideal as a filling for sandwiches, tacos, or served alongside your favorite sides.
