01 - 1 pound beef kielbasa, sliced into 1/2-inch rounds
02 - 1 1/2 pounds Yukon Gold or Russet potatoes, peeled and cut into 1/2-inch cubes
03 - 2 medium green bell peppers, deseeded and chopped into 1-inch pieces
04 - 1 large red onion, peeled and chopped into 1-inch pieces

05 - 2 1/2 tablespoons extra virgin olive oil
06 - 1 teaspoon kosher salt
07 - 1/2 teaspoon ground black pepper
08 - 1 teaspoon garlic powder
09 - 1 teaspoon paprika
10 - 3 tablespoons Buffalo Wild Wings Asian Zing sauce or barbecue sauce, for serving
11 - 2 tablespoons chopped green onions, for garnish
12 - Nonstick cooking spray, as needed for pan

# Steps to Follow:

01 - Slice the beef kielbasa into 1/2-inch rounds. Peel and cube the potatoes into 1/2-inch pieces. Chop the bell peppers and red onion into evenly sized 1-inch pieces.
02 - Place the potato cubes in a large mixing bowl. Drizzle with half the olive oil, then add the salt, black pepper, garlic powder, and paprika. Toss thoroughly to coat all potatoes.
03 - Add the chopped bell peppers and red onion to the seasoned potatoes in the bowl. Drizzle with the remaining olive oil and toss again until all vegetables are evenly coated.
04 - Coat a large rimmed sheet pan with nonstick cooking spray. Evenly spread the seasoned potato and vegetable mixture across the pan. Scatter the kielbasa slices over the top.
05 - Roast in a preheated 400°F oven for 30 to 40 minutes. At 30 minutes, check that potatoes are tender and everything is golden and caramelized. If necessary, continue roasting for up to 10 more minutes.
06 - Remove from oven. Drizzle the roasted mixture with Asian Zing or barbecue sauce as desired and toss gently to combine. Garnish with chopped green onions and serve directly from the pan while hot.
