Set oven to 400°F (approximately 200°C) for optimal baking results.

Heat olive oil in a skillet over medium-high heat. Add sliced bell pepper and onion, season with salt, black pepper, and garlic powder if using. Cook until vegetables are softened and lightly browned, about 5 to 7 minutes.

Lay deli roast beef slices flat on a cutting board. Spoon sautéed peppers and onions along one edge of each slice.

Place one slice of provolone cheese on top of the vegetables. Roll up each beef slice tightly from the filling edge to the opposite side.

Place assembled roll ups seam side down into a baking dish, fitting them closely together.

Bake in preheated oven for 10 minutes, or until cheese is bubbling and golden around the edges.

Allow to rest for one to two minutes before serving to avoid burning from hot cheese.
