Instant Pot Pork Chili (Printer-Friendly)

# What You'll Need:

→ Pork and Vegetables

01 - 4 pounds boneless pork loin roast, cut into 6 pieces
02 - 1 can (7 ounces) diced green chiles
03 - 1 can (7 ounces) diced green chiles (reserved for garnish)
04 - 1 red onion, finely diced, divided

→ Seasonings and Liquids

05 - 2 cups mild salsa
06 - 2 tablespoons chili powder
07 - 2 tablespoons Goya Adobo seasoning
08 - 1 tablespoon paprika (smoked if available)
09 - 1 cup water
10 - 2 teaspoons salt

→ Garnish

11 - Chopped cilantro
12 - Remaining diced red onion
13 - Cotija cheese, crumbled
14 - Sliced lime

# Steps to Follow:

01 - Cut the pork loin roast into 6 pieces. Dice the red onion and divide into two portions.
02 - Place pork pieces, 1 can of diced green chiles, half of the diced red onion, salsa, chili powder, Adobo seasoning, paprika, water, and salt in the Instant Pot.
03 - Seal the Instant Pot and select manual mode. Set timer for 50 minutes.
04 - Allow the pressure to release naturally for approximately 20 minutes, then remove the lid carefully.
05 - Using two forks, shred the cooked pork into smaller pieces within the juices. Do not drain the liquid.
06 - Stir in the reserved can of diced green chiles.
07 - Ladle chili into bowls and garnish with chopped cilantro, remaining diced onion, crumbled Cotija cheese, and sliced lime.

# Extra Suggestions:

01 - For substitution, pork butt (shoulder) may be used in place of pork loin roast. Smoked paprika enhances flavor but is optional.
