Cut the pork loin roast into 6 pieces. Dice the red onion and divide into two portions.

Place pork pieces, 1 can of diced green chiles, half of the diced red onion, salsa, chili powder, Adobo seasoning, paprika, water, and salt in the Instant Pot.

Seal the Instant Pot and select manual mode. Set timer for 50 minutes.

Allow the pressure to release naturally for approximately 20 minutes, then remove the lid carefully.

Using two forks, shred the cooked pork into smaller pieces within the juices. Do not drain the liquid.

Stir in the reserved can of diced green chiles.

Ladle chili into bowls and garnish with chopped cilantro, remaining diced onion, crumbled Cotija cheese, and sliced lime.
