Instant Pot Corned Beef Brisket (Printer-Friendly)

Tender brisket infused with aromatic spices and finished with a spicy mustard broil for caramelized top.

# What You'll Need:

→ Meat

01 - 4 lb uncooked corned beef brisket

→ Vegetables

02 - 1 large onion, quartered
03 - 4 cloves garlic, smashed

→ Spices

04 - 1 tbsp whole mustard seeds
05 - 1 tbsp whole black peppercorns
06 - 6 whole cloves
07 - 6 whole allspice berries
08 - 1 tsp crushed red pepper flakes
09 - 1 tbsp coriander seeds
10 - 2 bay leaves

→ Liquids

11 - 4 cups beef broth

→ Condiments

12 - 3 tbsp spicy brown mustard

# Steps to Follow:

01 - Add quartered onion, smashed garlic, and all spices into the Instant Pot.
02 - Place corned beef brisket fat side up on top of the aromatics, then pour in beef broth.
03 - Close the Instant Pot lid and lock it securely; set the valve to sealing position.
04 - Select 'Stew/Meat' setting and cook under high pressure for 75 minutes. Allow natural pressure release for 20 minutes, then quick release any remaining pressure.
05 - Transfer brisket to a foil-lined baking sheet, fat side up. Spread spicy mustard over the top. Broil on low setting about 8-10 inches from heat source until well caramelized, approximately 2-3 minutes. Monitor closely to prevent burning.
06 - Slice the brisket thinly against the grain for optimal tenderness and serve with preferred side dishes.

# Extra Suggestions:

01 - Cooking time depends on brisket thickness rather than weight; adjust accordingly if thickness varies.
02 - For reheating, wrap slices in foil and warm in oven at 350°F (177°C) to maintain juiciness.
