Wash all vegetables thoroughly. Chop tomatoes, onion, cilantro, jalapeño, and garlic as described.

Add lime juice and half the tomatoes to the bottom of the blender to facilitate blending.

Layer jalapeño, onion, garlic, cilantro, the remaining tomatoes, salt, sugar, and pepper into the blender.

Pulse a few times to release tomato juices, then blend on low speed until desired texture is reached. For chunky salsa, pulse to preferred consistency.

Taste for seasoning and adjust salt if necessary. Transfer salsa to a sealed container and chill in the refrigerator for 1-2 hours for flavor development.

Stir and serve cold with tortilla chips or as a topping.
