Place the pizza bases on a clean work surface. Lightly brush one side of each with olive oil.

Evenly spread tomato pizza sauce over the un-oiled side of each base, then layer with red bell pepper paste.

Arrange tomato slices, pepperoni, and mozzarella on one pizza base. Top with the second base, sauce side inward, forming a sandwich.

Place the assembled panini in the preheated grill. Close lid and press for 4 to 5 minutes, or until cheese is melted and bread is golden with grill marks.
