Garlic Butter Steak Bites (Printer-Friendly)

01 - 2 tablespoons olive oil, divided
02 - 2 tablespoons garlic and herb butter, divided

03 - 1 pound Yukon Gold potatoes, cut into bite-sized cubes

04 - 1 pound sirloin steak, cut into bite-sized cubes

05 - 1 teaspoon salt, divided
06 - 1 teaspoon black pepper, divided
07 - 1 teaspoon garlic powder, divided

# Steps to Follow:

01 - Heat a large cast iron skillet over medium heat for 2 minutes. Add 1 tablespoon olive oil and 1 tablespoon garlic and herb butter; allow butter to melt.
02 - Add cubed potatoes to the skillet. Season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper. Reduce heat to medium-low, cover with lid, and cook for 10–12 minutes, stirring occasionally to prevent burning, until potatoes are fork-tender and golden.
03 - While potatoes cook, season sirloin cubes evenly with ½ teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder.
04 - Push potatoes to one side or remove from skillet if concerned about burning. Add remaining 1 tablespoon olive oil and 1 tablespoon garlic and herb butter to empty side and increase heat to medium-high. Add steak bites and sear for 3–4 minutes per side, cooking in batches if needed to avoid overcrowding, removing potatoes if cooking in batches.
05 - Lower heat to medium-low. Return potatoes if removed. Add additional garlic butter if desired. Toss steak bites and potatoes gently to coat evenly in melted garlic butter. Adjust seasoning as needed before serving.

01 - To prevent potatoes from burning, remove them temporarily while searing steak and add back at the end to warm through.
