Crispy Broccoli Parmesan Fritters (Printer-Friendly)

Irresistibly crisp broccoli fritters with parmesan, oven-baked or pan-fried for an easy, wholesome side dish.

# What You'll Need:

→ Vegetables

01 - 500 g broccoli florets

→ Cheese

02 - 60 g grated parmesan cheese

→ Dry ingredients

03 - 70 g all-purpose flour

→ Binding agents

04 - 2 large eggs

→ Aromatics

05 - 2 cloves garlic, minced

→ Seasonings

06 - 1/2 teaspoon sea salt
07 - 1/4 teaspoon ground black pepper

08 - Olive oil spray

# Steps to Follow:

01 - Set oven to 200°C. Line a baking tray with parchment paper.
02 - Steam or blanch broccoli florets until just tender, about 3–4 minutes. Drain and cool slightly.
03 - Transfer cooled broccoli to a food processor. Add parmesan cheese, flour, eggs, minced garlic, salt, and black pepper. Pulse until ingredients are finely chopped and combined but not completely pureed.
04 - Scoop out mixture and shape into compact discs, about 1.5 cm thick. Arrange evenly on the prepared baking tray.
05 - Lightly spray each fritter with olive oil on both sides to enhance crispiness.
06 - Bake in the preheated oven for 12–15 minutes, flipping once halfway, until golden and crisp on both sides.
07 - Serve hot with preferred dipping sauces, sour cream, or plain yogurt.

# Extra Suggestions:

01 - For a lower carb alternative, substitute all-purpose flour with almond flour in equal measure.
02 - Allow the broccoli to cool before blending, as excess moisture may affect the fritter texture.
