Pat pork chops dry with paper towels. Sprinkle salt, pepper, ½ teaspoon Italian seasoning, and flour evenly over both sides. Rub the seasoning and flour into the meat.

Heat a heavy-bottomed skillet over medium heat. Add 1 tablespoon butter and swirl to coat the pan. Add two pork chops and sear for 2-3 minutes per side until golden brown and easily releases from the pan. Remove to a plate and repeat with remaining chops using another tablespoon butter.

Reduce heat to low and add the remaining 1 tablespoon butter to the skillet. Add minced garlic and cook for 30 seconds to 1 minute until fragrant.

Stir in heavy cream, softened cream cheese, chicken broth, onion powder, and remaining ½ teaspoon Italian seasoning. Whisk continuously and bring to a gentle simmer. Cook for 10 minutes, allowing the sauce to thicken until it coats the back of a spoon.

Gradually add shredded Parmesan cheese in ¼ cup increments, whisking until fully melted and smooth. Adjust seasoning with additional salt and pepper to taste.

Lightly spray the bottom of a 5- to 6-quart slow cooker with nonstick cooking spray. Arrange pork chops flat in the bottom, allowing slight overlap if necessary. Pour the prepared sauce evenly over the chops. Cover and cook on high for 1.5 to 2 hours or on low for 3 to 4 hours until pork reaches an internal temperature of 145°F.

Remove from slow cooker and serve immediately. Recommended accompaniments include roasted baby potatoes and steamed green beans.
