Combine softened butter, minced garlic, chopped parsley, and salt in a small bowl. Mix thoroughly and set aside.

Heat olive oil in a skillet over medium heat. Add chopped shrimp and cook for 2 to 3 minutes until warmed through. Remove from heat and set aside.

Spread garlic butter evenly on one side of each bread slice. On the unbuttered side, layer shredded mozzarella, cooked shrimp, grated Parmesan, and red pepper flakes if desired. Top with another bread slice, garlic butter side facing out.

Heat a skillet or griddle over medium-low heat. Cook sandwiches for 3 to 4 minutes per side until bread is golden brown and cheese is melted, pressing gently with a spatula during cooking.

Remove sandwiches from heat and allow to rest for 1 to 2 minutes before slicing. Serve with marinara sauce or tomato soup if desired.
