# What You'll Need:

→ Filling

01 - 1 lb ground beef (80/20 blend)
02 - 1 small onion, finely chopped
03 - 2 tbsp sweet pickle relish
04 - 2 tbsp ketchup
05 - 1 tbsp yellow mustard
06 - 1/4 tsp salt
07 - 1/4 tsp black pepper
08 - 1/2 tsp garlic powder

→ Assembly

09 - 8 flour tortillas, 8-inch diameter
10 - 8 slices American cheese

→ Dipping Sauce

11 - 1/2 cup mayonnaise
12 - 3 tbsp ketchup
13 - 1 tbsp yellow mustard
14 - 1 tsp granulated sugar
15 - 1 tsp white vinegar
16 - 1/2 tsp smoked paprika
17 - 1/2 tsp onion powder
18 - 1/4 tsp salt
19 - 1/8 tsp black pepper
20 - 1/2 tsp Worcestershire sauce

# Steps to Follow:

01 - In a bowl, whisk together mayonnaise, ketchup, yellow mustard, sugar, vinegar, smoked paprika, onion powder, salt, black pepper, and Worcestershire sauce until smooth. Refrigerate to meld flavors.
02 - Heat a large skillet over medium heat. Add ground beef and chopped onion, breaking up meat with a spatula. Cook until beef is no longer pink and onions are softened. Drain excess fat.
03 - Add sweet pickle relish, ketchup, yellow mustard, Worcestershire sauce, salt, pepper, and garlic powder to the beef. Stir thoroughly and simmer for 1 minute. Remove from heat and allow to cool slightly.
04 - Place four tortillas on a work surface. Layer each with 2 slices of American cheese, an even portion of beef mixture, then 1 to 2 more slices of cheese. Top with the remaining tortillas to form sandwiches.
05 - Heat a large skillet over medium-high heat and lightly oil the surface. Cook one quesadilla at a time for 2 to 3 minutes per side until tortillas are golden brown and cheese is melted. Monitor closely to prevent burning.
06 - Transfer quesadillas to a cutting board, slice each into quarters while hot, and serve immediately with the chilled dipping sauce.

# Extra Suggestions:

01 - Allow beef mixture to cool before assembling to prevent cheese from melting prematurely.
02 - Do not overfill quesadillas to ensure even toasting and proper sealing.
03 - Use medium heat for crisp tortillas with melty cheese interiors.
