In a large mixing bowl, combine ground chicken, panko breadcrumbs, egg, scallions, dried parsley, salt, black pepper, garlic powder, dried dill, and two tablespoons of Buffalo wing sauce. Mix thoroughly with a fork.

Shape the mixture into four equal patties and place them on a platter or cutting board.

Cover and refrigerate the patties for at least one hour to allow flavors to meld and improve firmness.

Lightly spray a nonstick grill pan or skillet with cooking spray and preheat over medium heat. Cook the patties for 5 minutes on one side, then flip and cook for an additional 5 minutes until fully cooked.

While the patties cook, toss undressed coleslaw mix with light blue cheese dressing in a bowl until evenly coated.

Place a lettuce leaf on the bottom half of each bun, then add a cooked patty. Drizzle with one teaspoon of Buffalo wing sauce and top with about ¼ cup blue cheese coleslaw. Finish with the top bun.
