Pat shrimp dry with paper towels to remove excess moisture. Place in a mixing bowl and drizzle with olive oil. Add garlic powder, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Toss to coat evenly.

Preheat air fryer to 400°F (200°C) for 3 minutes. Lightly spray basket with cooking spray to prevent sticking if needed.

Arrange shrimp in a single layer in the air fryer basket, cooking in batches if required. Air fry for 6 to 8 minutes, shaking or flipping halfway, until shrimp are pink, curled, and slightly crisp at the edges. Remove and squeeze fresh lemon juice over shrimp.

In a small bowl, whisk together Greek yogurt or mayonnaise, ketchup, Dijon mustard, garlic powder, lemon juice, and paprika. Chill until serving.

Serve shrimp hot with optional dipping sauce, over salad greens, tacos, rice, or alongside preferred sides. Garnish with parsley, green onion, or additional lemon wedges as desired.
