Soak half of the walnuts and cashews in water for 2 hours; drain and set aside. Keep the other half raw.

Soak the pitted Deglet Noor dates in warm water for 30 minutes to soften; drain thoroughly.

In a food processor, pulse the soaked nuts, raw nuts, soaked dates, cacao powder, and reishi powder until mixture is crumbly and begins to hold together.

Add honey (or maple syrup for vegan) to the mixture and pulse until fully combined and sticky enough to form balls.

Use your hands to roll the mixture into 20 even-sized balls, approximately 1 inch in diameter each.

Place the balls on a lined tray and refrigerate for at least 30 minutes to firm up before serving.
